Carlo Franchino
THE FARM
Azienda Agricola Franchino covers an area of one hundred hectares around the municipality of Rosasco (North-West Lomellina, province of Pavia, Lombardy), where our family has lived and grown rice for more than three generations.
CARNAROLI CLASSICO
Among the varieties of rice we grow, we market Carnaroli, which epitomises the excellence of our production.
The plant stands out for its height and elegant posture. The ear, gently curved downwards, has golden grains, with brown pigmentation at the apex, from which the “arista” clearly departs, a delicate filament particularly evident in this variety.
LOMELLINA
Lomellina is located between the provinces of Pavia, Novara and Vercelli and is the heart of the rice triangle. It is an area transformed over centuries by man’s ingenuity to take advantage of one of the precious resources offered in abundance by the Po Valley: water.
A remarkable feat of hydraulic engineering, a construction made up of progressively branched canals has allowed the widespread distribution of this commodity and has made this area one of the most fertile in the world..
RISOTTO
A soft and creamy risotto, whose grains do not compact, but remain distinguishable on the palate and “al dente”, a result that is usually obtained by adding butter and Parmesan at the end of cooking, mixing, and amalgamating everything with a wooden ladle.
